Sabudana Vada with Chutney

I still remember that we all used to look forward to Ekadashi, Maha Shivratri, Chaturthi etc because that's when Mom made our all time favorite treat...... Sabudana Vada!!! We could hardly wait for the golden hot steaming vadas to be on our plate where they were instantly devoured with chutney.... and now many years later, my kiddos do the same :))
Ingredients: Sago (sabudana) - 2 cups, Potatoes- boiled and mashed - 4 medium size, Roasted and coarsely ground peanuts (Danyacha kut) -1 cup, Green chillies - finely chopped - 4-5, Finely chopped Cilantro - abt 2-3 tablespoons, Lemon juice -1 tbsp, Salt to taste and Oil to deep fry.
Method:  Soak the sabudana, in enough water to cover it for about 4-5 hours or overnight. Drain off excess water, if any. Mix together sabudana, mashed potatoes, coarsely ground peanuts, chopped green chillies, coriander leaves, lemon juice and salt. Mix thoroughly. Divide into lemon sized balls, flatten between palms of your hands. Heat oil in a kadai and deep fry vadas in hot oil till golden brown. Serve hot with peanut/yoghurt chutney. 
Peanut/Yoghurt Chutney: To make this chutney, grind together 2-3 tbsp roasted peanuts, Salt to taste, 2 tbsp cilantro, 3-4 Green chillies and 1 cup Yoghurt!!!
