Quick and Easy Palak Paneer - with a twist!



This dish is really simple and easy to make. There are tons of Palak Paneer recipes but this one is an all time family favorite!! The unique flavors of Capsicum and Kasuri methi add a special twist to this traditional recipe. 
This is my maiden entry in Spicewholovedme's : JFI- PANEER ( November 2009).

Ingredients:
Frozen Spinach - 1 lb packet, Garlic - 6 big pods, Ginger - 1/2 inch piece, Tomato - 2 small ones (de-seeded), Capsicum - 1 big (cubed and deseeded), Paneer (8 oz) 1 packet, (i use Nanak brand), Oil - 1 tbsp, Butter - 1/2 tbsp, Green chillies - 2-3, Cumin seeds - 1 tsp, Kasuri methi - 1/4 tsp, Garam masala - 1 tsp, Salt as per taste.
Procedure:
In a Pressure pan/cooker cook the spinach, capsicum, tomatoes, garlic (half), ginger and chillies. When cool, puree it in a mixer or food processor. In a pan heat 1 tbsp oil and add 1/2 tbsp butter to it (it gives the dish a unique nutty flavor). Add Cumin seeds and other half of the garlic (crushed) and saute. Add the paneer cubes (Nanak paneer is already fried, if you use any other brand, please fry the paneer and add). Then add garam masala and the Puree. Cover and bring it to a boil by cooking it for 4-5 mins on medium heat. Just before serving, crush the kasuri methi in your palms and sprinkle it on top and mix it. Palak Paneer is ready to serve!!!
