Mexican Quesadilla and Mexican Rice

Mexican Quesadilla (with Chicken)
To make this quesadilla, I used multi-grain tortilla (trying to eat healthy). Added mexican cheese blend and cooked chicken (optional), cooked peppers and onion, and just folded over and then browned it ( 2-3 mins per side) on a pan using some oil. When its done, you can cut it into wedges and enjoy with black bean soup or salsa.

Mexican Rice
To make this you will need some oil, 1 cups of rice, 2 tomatoes (pureed), 1 tbsp ketchup, 1/2 cup chopped onion, 2 tsp chopped garlic, 2 cups veg/chicken broth/water and salt to taste. Heat oil and add garlic, onion and stir. Then add tomato puree and ketchup. Stir and then add rice. Cook for 2 mins and add stock/water. Cover pan and cook for 18-20 mins.

Nice recipe Rupali. I have tried quesedilla (I make of course veg and add sauteed onion and green peppers inside along with cheese). But, I always wanted recipe for mexican rice, so I will try it next time :)
