I am so thankful that everyone in our family loves Spinach! This dal is a staple in our house. Its very quick and simple to make and nutritious too.
Here is how I make it: Cook 1.5 cups tuvar dal with 1 bunch washed and chopped spinach in a pressure cooker. Then it lightly. In a pan heat 3 tsp oil. Add 1 tsp mustard seeds, 1 tsp cumin seeds, a pinch of asofoetida, 1 tsp turmeric powder and 1 tsp red chilly powder and 7-8 cloves of crushed garlic. Add 1/2 chopped onion and 1 chopped tomato. Cover and cook till onion and tomato is soft ie approx 4-5 mins. Pour the lightly mashed dal and spinach in the pan. Boil for 3-4 mins. Add 1 tsp garam masala and salt to taste. Add 1/2 tsp lemon juice. Serve hot with Rice or Roti.
