Beetroot and Carrot juice with Coconut Water!

This recipe experiment is a result of a recently purchase - Individual Coconut water packs from Costco. They are Natural, super refreshing and perfect for summer. 
Today when I was making Beet and Carrot juice, decided to experiment a little bit and added coconut water to enhance the taste. The result was amazing. Tasted so yummy!!

Here is the recipe: Peel and cook 2 beets and 2 carrots (medium size) in a microwave for 8-9 mins (till fully cooked and and soft). Alternatively you can also cook them in a pressure cooker. Upon cooling, mix it with coconut water about 11 0z pack and puree/grind everything in a mixer. Chill and serve. It is really that simple!!
