Coconut Onion Masala

This is a very versatile masala and can be used in various curries. It gives a unique non-veg flavor to the veg dishes. It tastes best when used fresh but you can freeze it and use as needed.
Ingredients:
2 big onions, 8-10 cloves of garlic, 1 inch piece ginger, 1/2 cup grated fresh or dry coconut, 4-5 peppercorns, Red chilli powder 1 tsp, Salt 1 tsp.
Procedure:
Cut onions and crush ginger/garlic. Heat 3 tsp oil in a pan. Add the peppercorns and then add onion and saute till light brown. Then add crushed ginger garlic. Lastly add fresh or dry coconut. When the mixture turns golden brown, remove from the heat. Let cool and then add red chilli powder and salt and grind into a fine paste.
